These Chicken & Rice Meal Prepped Burritos are perfect for freezing and grabbing when you need them.
Chicken & Rice Meal Prep Burritos:
- Ingredients:
- 1 Grounded Wholefoods wheat-free wrap
- 1 cup cooked rice
- 1 small grilled chicken breast, shredded
- ½ cup black beans, drained and rinsed
- ¼ cup cooked corn kernels
- ¼ cup shredded cheese
- 2 tbsp salsa
- Salt and pepper to taste
Method:
- Prepare your wrap smooth side up.
- Layer the rice, shredded chicken, black beans, corn, salsa and then cheese on the wrap.
- Roll it up tightly and wrap completely covered in baking paper, then wrap in foil.
- Freeze for up to 3 months.
To Reheat:
Remove foil and microwave for 1-2 minutes then while still wrapped in the baking paper, toast in a sandwich press or in a dry pan on low heat until the wrap is lightly coloured.
Remove baking paper.
Top burrito with sour cream and drizzle with sweet chilli sauce or your favourite chilli sauce.
Serve with a green salad.
